Hi,

I'm trying to produce a high gravity ale beer, Original gravity: 1.098, Final gravity : 1.024, but after a month the fermentation is stable a 1.055! Fermenting, at temperature of 18º C.

What should i do, bottle or wait?

I used a refractometer. The mash temperature was around 70ºc and 65ºc. Didn't aerate. And the i used is fermentis S04.

A refractometer will not read fermented wort correctly. Mine has been off by as much as .025. A conversion chart/table/whatever is needed. Use a hydrometer for FG readings.

Unless you used a correction calculator, and had an established wort correction factor, a SG reading with a hydrometer may ease all your worries.

Dry yeast especially for high gravity brews, should be rehydrated and multiple packs pitched, with good aeration.
