I ran across a dozen swing top bottles and I replaced the rubber seal of these. I would like to use these to fill beer from my keezer for guests to take home and enjoy. Anyone have an idea if this would work OK for very short term storage?

Should work ok but they won't last long if you are just pouring straight from the tap. I would say at most a couple of days.

It works fine. Think of them as growlers. If you have a growler filler, it will work even better. If not, jam some racking tube up into the tap and use that as a growler tube.

I've done this (with probably the same 16-oz swing tops you're describing) and it worked fine. It's obviously not as great as beer right out of the tap, but it's still good.

Tip: Before you fill the bottles, turn your regulator waaaay down to like 5 PSI or less. Then pour yourself a pint before you fill the bottles. It helps reduce foaming while you fill the bottles.

Another tip: make sure the bottles are extremely clean, and it also helps to chill them in the freezer for 5-10 minutes.
