FG after 5 days...

Case study!

Friday night I made 2 batches. An American IPA (OG 1055) and a Golden Ale (OG 1048). Both 5 gal.

Today while I was adding the dry hop I took a density reading and the IPA was at 1005 (the recipe says 1010) and the Golden at 1008 (the recipe says 1011).

Has anyone achieved FG so quickly? Should I cold crash? My gut says to wait until saturday...

EDIT:

For the IPA I used 2 pk of BRY97

For the Golden, I used 2 pk of Nottingham

My plan is to wait for 7-10 days and the cold crash.

Depending on yeast strain, pitch rate, temperature, etc., five days isn't unusual for attenuation to have finished (if it has). But that doesn't necessarily mean the yeast is finished cleaning up fermentation byproducts, such as acetaldehyde and diacetyl.
 
If the yeast was ready to go and fresh then it's not crazy at all to reach terminal gravity after 5 days. I wouldn't say it's done though. I'd let it sit for another few days so you're sure the yeast has finished cleaning up then dry hop or cold crash and package.
 
I wouldn’t be surprised if it was basically done in 5 days, especially with 2 packets.

You had a bad keystrike in your answer. I wouldn't be surprised if it was basically done in 3 days would be correct. Ocassionally one could replace the 3 with a 2 even, especially with 2 packs of Nottingham.
