I all, been busy as of late not much brewing going on but I am getting my christmas batches on... Just bottled a festa brew pale ale. It actually sat in secondary, 3 weeks after having been on yeast for 8 days... Bottled tonight, used enhancer, muntons... Questions, it actually tasted pretty good, right out of secondary, has a definite pale ale taste to it. So, is the yeast still going to be active enough to carbonate? Did the aging in secondary, count in the aging process, flavor wise?
