After fermenting and then racking cider, the cider generally looses the apple taste for a few weeks before it starts to come back. Why is it that the apple taste goes away, and then seems to come back?
 
It could be that you are having a natural MLF. What temperature is your cider at? MLF produces some chemicals that mask the fruity flavours, but they only last for a few weeks, then the flavours come back. If your cider is below 16C then it is probably not MLF. My cider is going through MLF at the moment, (cultured), for a few weeks it tastes worse but then the flavour returns.
