My 5 gallon batch of cider showed signs of fermenting about 3 weeks ago, but is still showing signs. There's bubbling in the airlock about every 30 seconds or so. This is my first ever batch. Shouldn't fermentation only take about 2 weeks? I'm moving in a week and wanted to bottle soon. Do you think bottling at this point would cause the bottles to explode or merely make the final product fizzy? Otherwise, how much longer do you think it will take?
 
If it's not done fermenting, and you bottle it, you will have bottle bombs.

Do you have a hydrometer? That's the only way to tell when it's done. Take a hydrometer reading today, and one in at least three days. If they are the same, the cider is done.

It takes a while for fermentation to finish up, and it's not always entirely predictible. It depends on the yeast strain, temperature, the amount of yeast, the OG of the original must, etc. When it's clear, it's almost always done but you still need to check with a hydromter to ensure it.
