So I started a new mead yesterday, one that I will not be tasting until Christmas next year (2012). It has been 24 hours and is fermenting...but I am only getting 1 bubble (through my airlock) every 3 seconds. The last time I did a mead I was getting a bubble a second.
Both methods were the same (A kind of JAOM) however this time I reduced the amount of honey and added a small amount of clove and cinnamon.
Is this amount of airlock activity acceptable?

Airlock activity is a very poor guide to the state of the ferment.

As you say you've used a JAO type method, then just let it do its thing.

If you were doing a traditional, then I'd suggest you get a hydrometer and test jar. As the best way to know of a ferment progress, is gravity readings.....
