Brewed a batch of beer on July 25. Pinched yeast and airlock bubbled for about 10 days or so quite steadily. Then seamed like the fermentation slowed sown and had a yeast cake sitting on top. I decided to wait until it sank to the bottom before racking to my secondary. No worries just wait it out. About a week or so ago I happened to walk into my fermentation room and heard the airlock bubble every 10 seconds or so. I have it in a glass carboy with a towel on top so I lifted the towel and there were bubble and all sorts of fermentation activity going on. I've never had this happen before. My temp has remained at 66 plus or minus a degree or two. Any insights as to what is going on with this pale ale?
 
It could be CO2 off gassing and carrying sediment up into the beer. Is there white film or white spider web type material forming on the top? This would be a sign of a developing infection.
What did you brew and what was your yeast?
 
Its been in there 6 weeks, seems like it should be done. You could wait until activity stops or chill it down to get the yeast to quit and drop out.
Then pull a sample and see what you have.
 
No white layer or any other signs of infection. Things settled back down and yeast is set telling back into the beer. It's a Pale Ale. Yeast was California ale. Should be interesting. On a better note my American IPA is finished and getting cold crashed probably going to keg it over the weekend. And my English brown ale is down to 1.012 for Two days so that will get cold crashed next and kegged. Thanks for the help
