My closet in my basement averages 58f, used a temp gauge. I've heard of fermenting heffs in the low 60's. Would 58 really make a difference?
Do you know if its the wheat yeast that is in the bottles. I heard/read somewhere that many German breweries will filter the fermentation yeast out of the hefe and add a lager yeast at bottling.
