My closet in my basement averages 58f, used a temp gauge. I've heard of fermenting heffs in the low 60's. Would 58 really make a difference?
 
What yeast did you use?

Just started mine and fermenting nicely at 63! In 16 days, let's compare! :D

I would think at the lower temps you will have more of the clove ester, depending on yeast strain.
 
If I'm understanding you correctly, your ambient temp is 58, which should put your wort somewhere in the 63-68 degree range when it hits full throttle. That's still a plenty cool temperature. Many German breweries making weizenbiers allow their fermentations to rise into the low 70s, so you should be at a pretty reasonable temperature.
 
Ambiant temperature is different than wort temperature. I have my weizenbier fermenting in a bucket on the ground floor office. 68 on the stick-on aquarium thermometer placed from the 3 gallon mark down (so about lower third of the bucket).
 
Do you know if its the wheat yeast that is in the bottles. I heard/read somewhere that many German breweries will filter the fermentation yeast out of the hefe and add a lager yeast at bottling.

Different breweries have different practices. Some reyeast with the same strain that did the bulk of the fermentation, some use a different one. Is there a particular beer you're interested in?

Go for it and see what happens. If nothing takes off or it begins to stall all you have to do is a find a warmer spot.

I've heard that too, but I thought I would still giver a shot and see how it goes. Its still having a beutiful fermentation. I'll let you guys know what my results are in a couple weeks.
