I 'm going to be statring my 1st mead and I only want to make 2 gallons of it, Can I use my 6 gallon primary then when it is done put it in 1 gallon bottles? Is the large air space going to be a problem in the bucket?

You'll be fine with the large primary.

As Solstice said, headspace is more of an issue for secondary and on, so once primary is complete and you want to rack, just minimize the headspace then.
