Looking to ferment unfiltered and lightly boiled wort with no hops and give a go to the result A bit blind in terms of best yeast type and expected flavours and yeast addition amounts for anything between 3-5% alc v/v. Plan is to bottle towards end of fermentation so CO2 won't blow up the bottles.
Anyone done something similar before?
