So as a newbie brewer (3rd batch bottled and in its 2nd week), I have noticed I am missing that great big head on a poured beer. My last 2 batches have been wheat beers (hefe and pumpkin wheat). I add my priming sugar to the bottling bucket and create a whirlpool from the siphon. I then bottle immediately.

Any thoughts? My hefe has been bottled now for over a month.
 
Believe it or not it could just be your glassware isn't perfectly clean. Take a fresh glass and clean it with some vinegar and rinse and dry really well.

Soap residue and other contaminates can prevent the head from forming or break it down really quick.

Head formation and carbonation are not the same thing.
 
+1 on what duboman said.

Try pouring it into a solo cup and see how it looks in there to confirm that theory. What really matters is... how does it taste?
