If you keg to early say...when your at 1.020 and your expected FG is 1.012
what Im getting at is I am going on vacation and I im forced to rush my brew. Its a Blood Orange Hefe ....theres a thread on here with the recipe (turned out damn good as well) I had no activity in the airlock (which i know you dont go by) so I kegged the beer.
when it was racked to the keg I sanitized my hydrometer and took a reading ..1.020^ I proceeded to cap it up and pressurize for a good seal.....

Will it continue to ferment in the keg under a small amount of pressure? (7psi)

Yes, as long as you keep it at a reasonable fermentation temperature, for whatever the yeast is. If it's an ale yeast and you throw the keg in the fridge, the yeast will go dormant. The pressure will just increase on the keg as the beer ferments, and it will probably start to carbonate itself as well. You may want to take a look at the discussion over on this thread. According to the thread, it's "advised" to keep the pressure under ~15 PSI. Which I actually didn't know...you learn something new every day :mug:
 
Not sure how you are 'forced' to keg too early. You just don't keg it. Unless its a 6 week vacation the beer is gonna be better off sitting a few extra days than racking early off the yeast cake, which can stall fermentation.

Not to mention you'll have a fresh yeast cake in the keg.

Sure, it works, but YOU are in charge of the beer, not vice versa :)
 
Since it's a hefeweizen there will be plenty of yeast to finish the ferment. With 8 points to go, it might be a bit over-carbonated when done.
