I've come to realize that my fermentation temps may be too high, based off of hasrsh alcohol bite in my beers, I've always assumed that the beer was at the same temp as ambient air temps...wrong! How do you all keep the beer cool enough during fermentation and what do you use to keep track of this temp? One of those sticky thermometers that stick to ur bucket? That doesn't seem like it would be very accurate
 
I built a fermentation chamber out of an old mini-fridge about 6 months ago view it here or click the link in my sig. Before that I used a water bath and ice bottles, and tried to keep the water temps about 60°F, so with that buffer internal ferm temps were probably around 68-72 degrees tops. More labor intensive, but definitely noticed less temperature induced off-flavors in my beers.
 
The stick on thermometers are good to within a couple of degrees. I have them on all my bucket fermenters they are invaluable to knowing the temps of the beer.
