Hey guys question about fermenting. I have an ale in the carbon now and the gravity is reading at 1.01 and needs to be at 1.021 when finished. My question is if my OG started at 1.07 can it go back up to 1.021 or did I miss it? It has only been in the primary for 6 days. Any help would be appreciated as this is my first brew. There are also still signs Of active fermentation, it is bubbling once every 40 seconds.
 
It's fine. 1.021 was just a guideline. You got more attenuation. It may be a little dryer than the recipe and a little stronger but a lot of people (my self included) consider that a good thing. RDWHAHB
 
Thanks! Good to hear. I am planning on checking again tomorrow and seeing what it is at.
 
OG will not go back up. If you are doing extract I would check the hydrometer a they usually finish high not low. If all grain you may have mashed a bit lower temp than recipe and thus have more fermentables. Or you may just have a particularly aggressive batch of yeast.
 
I wouldn't expect it to go down any further with an O. G. of 1.070. If it does make sure your hydrometer reads 1.000 in plain tap water. (at approximately 60 degrees Fahrenheit)
