fermentation deadline, need advice

i am not brand new to wine making but i am in no way a pro. i have made about 20 gallons so far. i always use the correct chemicals and procedures and the final product is great and everyone likes it. i am graduating college on May 20th and was hoping to have about 5 gallons ready for my party that weekend, my question is this, if i start fermentation tonight, will the wine be "ready enough" to drink by May 20th? i usualy let it ferment for about 30 days but with the short time i have, i will only have about 21 days of fermentation....is that enough?

Ive drankin my apfelwein backsweetend 12 days after droppin rehydrated yeast when I racked a 6 gallon carboy off to a 5 gallon.

Id do it. But im not picky, and it was the second batch ive ever made. And Id do it again if I ran out of it. Haha

I should add, I used lalvin (never used red star) so Im not sure of the speed. I know my OG was 1.060 and SG was at 1.002 when I racked it off. Sweetened the left overs and had a good night
 
Yeah, with that kind of time you might as well just buy some vodka and pour it into your grape juice. Maybe wouldn't hurt to start a batch of great quality wine to open every year for a decade after your graduation, but maybe not.
