I'm going to brew an American Wheat, I want it to be about 7 -8 % abv, And have flavors of lemon a lil lime and tropical fruity flavors and grapefruit as well

Question about HOPs,in general, Will they flow and compliment each other well together? Omissions? Additional hops? Addition times into boil, etc?

The cascade hops at flame out, and for Dry Hopping are my homegrown from last harvest and Gave them and out of the blue aau rating of 3.25 cause of their age??? Would I be in the ball park with that number?

Any advice would be great!
