Anybody out there have a fast fermentation....under 16 hrs? Amber ale 1.060 OG pitched yeast last nite @ 8:15p. Today at 3p.....barely any bubbling. My friend witnessed this. Haven't had a chance to check a gravity yet. 4.5g batch.

It can and does happen. What were your pitch and ferment temps? What yeast strain?

Pitch temp 66 F & temp remained around 68 F. Had it happen on bigger batches before but never on smaller ones. Used S-05 rehydrated.

So I checked a gravity, well over than I want but it has fermented & still a lot of krausen on top. So I stirred it some to see if I can get it going some more. My LHBS told me to let it go for 1 full week & recheck before repitching. Thoughts??

Leave it alone and check back in a week.

I would think that if it's barely bubbling after 16hrs its still getting started, not slowing down, but either way it's best just to ignore the airlock, give it time, and use your hydrometer.
