Hello, I just found out there are some people who sell yeast, it is called Levaduras Monjecitos (lil´monks yeasts). I found out about them because I saw a post who shows that with one type of yeast they fermented and Imperial stout in 72 hrs. This cought my atention so I checked them online. There is little info about them, they say that maybe you don´t need a bigger fermenter or another fermenter. Maybe you only need another yeast. So, what could be the benefit in faster fermentation or shorter fermentation time?. Thank you!

An Imperial Stout in 72 hrs? Completely fermented? That carboy must have been screamin' hot with that kind of activity....

My concerns would be off flavors developing from such as fast fermentation as well as lack of flavor development.
