What a pair of days it has been at the Stakem plantation.

Yesterday tequila BA tome and coffee ruby arrived. Today a case of Blanche.

New batch o Blanche must be seeing distro because it has a new Shelton logo on her. You know I couldnt wait, im already drinking one. Smell is crazy fresh grapefruit. Taste is different... it got some grapefruit and grassy bitterness but there is distinct yeastiness to it as well coming off like clove and peppercorns. The finish is very abrupt. This is very mild almost watered down by tome standards with seemingly no grain impression nor alcohol impact.

Excuse me while I finish the bottle and completely change my mind about the second half.

Every time someone makes a post similar to this a part of me dies because I dont have a bottle. ******* hell if I had one it woulda be drank still warm outta the box on my porch upon arrival and I woulda compiled a fully detailed TPS report on it to share.

So... blanche is slightly over-carbonated/attenuated.
BA tomer is slightly under-carbonated/attenuated.

Right upfront im gonna state that whatever base batch of saison this was, it was strawberry heavy and probably amazing without the barrel. This not only has tequila and oak/layers of fruit but also has a very distinct brett/house tome character that is very evident in bottles that are 10+ years old.

I'm exhausted tonight, and was too lazy to go downstairs to get the ol' Tome Tulip for this.

But my God, this beer is a show stopper right now. Pretty sure this is either the December '16 or January '17 batch. The nose is a lemon-lime assault. Fully attenuated, with Fantome funk poking through. Not sure what spices and/or botanicals are in here, but it's the like a beer version of the most refreshing G&T you've ever had.

By far the best Dalmatienne I've ever had, and one of the best 'Tome experiences I've had in a while.

 
Couldnt drink it yesterday as I had to be responsible and transport my childrens. When Blanche bottle is empty im cracking it pretty shortly. Worry not.

Cheers man. Just giving you guff because I was anxiously getting my panties in a bunch waiting for an expert knowers opinion. Glad to hear its good.

The last batch of saison I had was straight strawberry juice. I reckon it was a 2016 batch, American label. Maybe the same.
 
Anyone open a '15? (I think, says "best by end of 2017" on bottle) ete recently? I opened one Summer '16 and it was finally starting to carb up. I have a couple left that I don't want to sacrifice if it's still a bit underattenuated.
 
I had an awesome Fantome experience at The Sovereign in DC.

According to the buyer, they tried to purchase a single keg, but instead they received two half full kegs - one La Dalm and one Printemps - along with five pallets of bottles. The La Dalm didn't taste at all like previous versions I've had of this beer, but tasted exactly like Brise Bon Bon. Who knows.

I also had a bottle of the Fantome/Grimm.

It was light and effervescent, lots of peach and nectarine fruitiness. **** was amazing.

I also had a Printemps, which was super herbal. I then got saison drunk on Blaugies and Thiriez stuff. I need to visit DC more often.

That place is great. I was there last year and they had Hiver on tap and an excellent selection of ghostly bottles. A real tomer's paradise.
