So much going on here. Super herbal. I’m getting spicy pepper, lots of floral notes and cinnamon. Very unique, but tasty.

So if my understanding of this one is accurate...this was a Fantomish take on a porter but with the addition of cherries that were forgotten about in the brewery but recently found and used in this.

With a name like krieken awakes, I guess I was wrong in assuming the cherry inclusion would be more pronounced.

Its definitively fantome but I have no idea whats going on. It has a pleasant hint of chocolate roastiness and cherry pit aftertaste but it also is slightly more herbal/bitter than I prefer Fantomes to be and has a distinct mineral/carbonic bite also like young/green offerings. Regardless, it took me 3 pours to finish the bottle and I wasnt mad one bit. In fact, I think each glass tasted a little different as I got to the bottom of the bottle and the ghost tickled my innards.

Glad I bought a couple, will be fun to revisit.

On facebook, fantome serious knowers page - Mike (Danys assistant?) has been letting the details fly regarding whats new and happening at ground zero.

Negroni is a new collaboration with a “coral/rose color”

Dany says etre will have some in the coming weeks along with another hop saison “eukanot and mosaic.”

Drinking my first bottle of Flowers. I love it as I knew I would given how much I love garrigue/herbes de Provence in general but it’s not quite what I was expecting, less straightforwardly floral and more of a savory herb note. Definitely some soapy lavender though. I wasn’t even thinking about it but this is going to pair really well with the sausage balls we’re making right now for GoT company tonight. I wonder though how it will age as it’s all fresh adjunct character right now and virtually no sign of funk etc.

Had Scatouch over the weekend.

Over an inch of sediment was in the bottom before I cracked her open. Was being very careful with it as I wanted to experience what it looked like without and with the mystery sludge included in a pour. Unfortunately, upon uncorking the beer erupted and everything mixed together. I was able to catch a glass of foam and once the overflow stopped, I got a single glass to drink.

It was not good. Tasted like pocket change, grass clippings and plastic.

Reportedly, bottles with the extra sediment were kept at the brewery for sale and not sent to the Goblin pub. This was one of them bottles and the mystery pulp is supposedly mango puree.

I cant think of a more comical way to ring in unique Fantome bottling #100 for me than this. You win some, you lose some. Cheers to another 30 years and 100+ more crazy creations.

Of the 3 different “dry hopped saisons” I really dont think this one panned out as well as the others. Maybe I did it a disservice by not drinking it with the others for comparison. Simcoe and Sorachi were definitively unique and easily differentiated from one another. This one, the amarillo didnt really come out. It just smelled/tasted like a classic, clean saison with clove/peppery phenolics being the monotone character throughout.

It's impossible to tell you which ones to buy because it's usually a crapshoot. Buy one of each?

I think Brise Bonbons is underrated amongst Serious Knowers. Dalmatienne and Dark White would be my next two picks.

Buy 1 of each.
Consume and form your own opinion.
Return to store and buy more of your favorite(s)

;)

If thats the batch of dark white thats been around for awhile, i think its a gem. Shake your bon bon and printemps are auto-buys for me when I see them. Dalmatienne can be quite herbaceous. Dont point forest ghost at your face, you’ll shoot your eye out. Noel is my Christmas beer of choice but this past years batch was meh

Newest batch of blanche that was on etre tastes like saison dupont blended with grapefruit seltzer water. Smells incredibly vibrant with grapefruit zest too.
Yes! Great to hear. Blanche can be hit or miss for me, but when it’s a hit it’s one of my fav beers. Really glad I ordered a few bottles when they popped up a few weeks ago.
