The bottle in the front is one of the more obscure Fantome I've ever tried. Oxidized English Old Ale meets Belgian Golden Strong, fair amount of phenolic yeast profile, sweeter and "bigger" than I expected, and I'm not sure I would have picked it as a Fantome bottle blind.

The Zomersaison was glorious, and I think Fantome / Lambic blends might be my favorite thing ever.

Sorry for the random messages stakem, but you were the only person I know who could provide insight on what I was drinking.

As Garrett from JK has mentioned before, and I agree whole heartedly, some old fantomes from the 90’s i swear are made with lambic or the dregs of lambic were left in the bottles when refilled with ghost juice.

Sorry to hear your croisee des mondes experience was very unlike mine Thorpe probably aged the bottle upside down in the microwave.
 
I think the last time I drank a chocolat was when I found some turding up the shelves of Florida 3-4 years ago. Figured I was over-due so popped one. This really reminds me of a well aged brise bonbons with classic fantome house/brett all across the finish.

Drinking through this, I looked a little closer at the label and was kinda surprised to see the listed cocoa and chilis as I dont believe I ever noticed that before. So, I looked around and yup. Likely added during the switch from paper labels to glossy where Shelton bros ravaged them and made their logo/information take up almost as much room on the increased labels as Fantome....

Been a while since I’ve had a Dark White. Right out the fridge it’s too earthy and bitter, but just 5 minutes later it’s already warm enough (and maybe something has blown off) that that takes a back seat to the strawberry and figs and caramel and touch of acidity. ******* so good and unique. I don’t know how to parse the batch labeling (stakem?), but FWIW this is “lot 3b M 15 et best before end 2018”.

2012 bottle from the peak of the rubber tire dumpster fire.

I bought a bunch of these back then, drank 2 of them almost immediately and then questioned whether I should use them as target practice or just lay them to rest hoping for better days. As the years went by, I looked at these bottles and shook my head.... damn you Dany! But I knew to have faith in the ghost and let the mystery bacteria run its course like it always does.

Here we are, 6 years later and I cant help but to check in on it. Son of a bitch, this is why Fantome is my favorite and likely forever will be. A batch so terrible has, over the course of 6 years, turned into something not only drinkable but freaking good! Tart strawberry all upfront, husky dry grain and then a faint scorched grain aftertaste that is minuscule in comparison to what this was like fresh.

Like a ******* pheonix rising from the ashes, I cannot believe this.

Football? Never heard of it.

I was relaxing, sitting outside listening to the rain fall and thinking about all the animals I will lay to rest this hunting season while our evening feast was marinating. Now, im griling said marinated meats ala pheasant legs, squirrel and dove breasts while drinking this palate cleanser before getting into another tome or 2.
