Hello:

I am brewing a Belgian brown ale. I have done this brew before without any problems. This time, the fermentation hasn't started. The one thing I have done differently is that I used White Labs Clarity to make it gluten free. After 24 hours, there is not fermentation activity but there is lots of sediment at the bottom, presumably from the clarity. The yeast was the White lab Belgian Ale yeast.

The temperatures for the wort and the yeast were all correct and it has been sitting at 19C for 24 hours.

I am going to go and get more yeast in hopes of salvaging the batch.

Murphy's law that this is happening on the one batch I am in a time crunch for.

I use clarity ferm in every batch, never had fermentation issues. I would look for another variable.
 
Turns out I just needed some patience. After 36 hrs it was fermenting. By 48hrs there was a nice head of foam. It just surprised me as all of my other batches were fermenting well by the first day.

Did you make a yeast starter? How old was the yeast you used (the date on the package use by date is a good clue to the age of the yeast)? And what was the OG of the batch? A higher OG beer will need more yeast, and older yeast has less viability as well, so there are some variables here that mean that each batch is different.

If you made a yeast starter, then I don't know why it would take so long to start. That would be unusual.
 
OG was 1066. The yeast was fresh. No starter this time. I'm in a time crunch and neglected to get one ready. In hindsight it would have been the same amount of time and my yeast would have been in a better environment.

I recently learned the benefit of yeast starters. My previous high alcohol beer always had a mediciney taste to it. It wasn't until some more experienced Brewers pointed out I was under pitching my yeast. since then I've used yeast starters and that problem went away.
