Still pretty new to brewing and the 1 gallon kit I got used actual grain. I learned that with pouring water through the mash I'm extracting sugars from the grain, and that got me to thinking. Is it possible to add some sugar (like brown sugar, I'm going to try a brown ale next and Dogfish Head uses a organic version in their brewing process) to the grain before extracting the wort, or should I add it later in the process?
 
Thanks, any idea how much? I'm only making a one gallon batch so I was thinking along the lines of two or three tablespoons
 
I don't have any experience adding in sugar, but perhaps find a suitable recipe and scale it down to 1 gallon? Anything else is pretty much guesswork.
