Extract stout, wanting to add a base malt

I'm going to do a stout soon, and I have enough extra grains that if I order the dry Irish stout from Northern Brewers I will be very close to all the ingredients for dangerbrew's Boondock saint stout.

Recipe is:

4lbs pale extract
1.75 lbs light dme

2lbs roasted barley
.5lbs 80L crystal
.33lbs flaked barley

1oz target
1oz e.k. goldings

I have .75lbs of roasted barley
.75lbs flaked barley
and the hops needed
and the kit comes with
6lbs golden liquid
1lb roasted barley
2oz cluster hops

I was going to cut the roasted barley to 1.75lbs instead of 2lbs and use the some of the flaked barley i had, then buy the extract kit and crystal...

Question is anyone recommend a base malt to replace the light dme, i was thinking maris otter, and if I do that what would the result of still adding the full 6lbs golden lme? I'm thinking it wouldn't be too big of a deal just boost abv..... What base malt would you recommend for an Irish stout and what weight would you use?
 
Are you trying to turn this into an all-grain recipe?

Also...2lbs of roasted barley is a LOT. I don't think I'd want to touch a beer with that much RB in it. I usually stick to around .5-.75lbs TOPS.
 
Yeah I've thought it was too, but that's what the recipe called for. I think I'll probably cut it back to 1lb.

But not quite going for an AG but I'd like it to be at least a partial. Just wondering what would be the best malt to do so? Pretty much just replacing the 1.75lbs light dme.
