Can I take a regular Kit and just swap out sorghum syrup versus the kits syrup?

I would also swap out the yeast for a proven gluten free yeast, Safale is good stuff.

Also, don't use any specialty grains if it comes with any.

+1 on that, same could be said for a recipe...but a little tweaking here or there doesn't hurt either

Of course, if you're swapping everything out, I don't see the point of buying a kit.
