Here is my photo of my latest Brew an Extract Kolsch the head fell very fast.
Not sure if that's because of the beer or the glass - dishwasher using a rinsing agent.

Steep a pound of flaked Wheat to give you some protiens and head/head retention; Friends just made several with just Pilsen DME/Flaked wheat and they turned out very nice.
 
Looks great! I have a kölsch in primary right now that I'm about to switch to secondary tonight.
