Thinking a buying a few kits at once to save on shipping, how long can I keep cracked (specialty) grains before anything bad happens to them? And would fridge storage be best for them?
 
I've kept kits for six to eight weeks without a problem. They were kept in my garage at about 45 degrees also my grains came sealed in air tight packaging so i wasn't to worried about them. I think if you kept it all in the fridge it should be fine for at least a month or two. As long as you keep everything sealed and dry you should be good.
 
LME and Yeast go in the fridge, Hops go in the freezer, DME and Grains go in a drawer.

Edit: Order the grains uncrushed and they will last longer. To crush them on brewday, put them in a 1 gallon ziplock bag, get all the air out, and use a beer bottle as a rolling pin on the countertop.
