I've seen jack Keller's recipe that calls for 2 bottles per gallon. I also have seen somewhere where 3 bottles is recommended. Has anyone used 3 per gallon? If so, any advise/extra notes on aging, tannins, ect ect. Thanks homies.
 
Do you mean cans of concentrate? You can make it as much concentrate as you want, we did one where all the sugar came from just the concentrated juice. It finished and of course was very acidic. Chilled it outside to let the tatartic acid crystalize out, got a nice pile of crystals, added some oak and aged and it turned out nicely. I think we may have put it thru MLF, we also did a Niagra concentrate that way, good stuff for so cheap. WVMJ
