So I mashed and put my wort into my cleaned and sanitized igloo cooler at 100F and added 3 shots of Goodbelly on Tuesday afternoon. Life hit me hard and I was only just now, 96hrs+, able to boil and cool and pitch yeast. How sour is this sucker going to be?

Wort was 1.06 when I added the Goodbelly, was 1.05 today. I didn't take a PH test.

I would be cautious of tasting the wort at this stage without a pH reading/estimate. Either way it is hard to pick up significant tartness with all the sugar present at this stage. You should, at a minimum, be monitoring the pH with strips to follow the process.

Why cautious of tasting it? The boil will have wiped out anything harmful.

I missed the part where it was already boiled and pitched. I thought the question was should it keep going or not. Well, you'll have your answer in a bout a week!

I have seen where folks use Goodbelly shots for their lacto source. Is there a place where these shots are commonly found such as grocery stores or health food stores? I have never found them in my area.

I had a hard time finding them as well, until a Barron's market opened in my neighborhood. They need to be stored cool, so don't waste your time looking for it by the probiotic pills. I haven't found it at any other grocery stores or whole foods in my area. Hopefully you can find it cause it does a damn good job of souring at room temperature.

I keep looking, so maybe a bigger sized market area will have a place to carry them.
