Every recipe for root beer I've ever seen says to bottle it pretty much immediately. This always results in some... vigorous... beverages. Should I let it sit in a fermenter for a couple weeks before I bottle it?
 
I get that, but how do I keep from losing half of the product because if flew out of the bottle before I could drink it.

Once you bottle it, bottle a few in plastic bottles at the same time. When those bottles get hard, put the root beer in a very cold place like a fridge to slow down the carbonation.
 
You need to let it ferment out. However, as you let it sit longer, it will create alcohol.

Ginger bug sodas are difficult to guage. It takes a good culture and lots of experience.
