Excess Mead, what to do with headspace?

Hey guys,

Just racked over a jasmine accacia mead and found that I had a half gallon excess of mead after fermentation. I have put it in another carboy and put an airlock on it, but do any of you have any suggestions for dealing with the headspace?
 
You can remove the headspace by transferring the excess mead into a half gallon carboy or growler or into wine bottles. Your LHBS is likely to sell drilled bungs that fit bottles into which you can slip airlocks. Alternatively, you might fill mason jars with this mead and store in your fridge. You may still need to burp the mead occasionally because even in the fridge the yeast can still ferment though very much more slowly. The problem with mason jars, though is the large surface area at the top compared to a carboy with a narrow neck.
