Hi guys,

I found a good looking recipe for Peter Zien's Evil Dead Red clone and I have modified it to use up the leftover grains, extract I have in my fridge and recycled US-05. I was wondering if anyone could provide input as to whether my modifications are going to significantly or negatively affect the finished product.

The original recipe is as follows:

Evil Twin Red Ale (Irish Red Ale)

Original Gravity (OG): 1.066 (°P): 16.1
Final Gravity (FG): 1.017 (°P): 4.3
Alcohol (ABV): 6.48 %
Colour (SRM): 16.9 (EBC): 33.3
Bitterness (IBU): 38.7 (Average)

73.25% Liquid Malt Extract - Light
8.3% Crystal 40
8.3% Munich I
4.06% Crystal 120
4.06% Victory
2.03% Chocolate, Pale

0.3 g/L Magnum (12.5% Alpha) @ 60 Minutes (Boil)
0.6 g/L Amarillo (8.6% Alpha) @ 20 Minutes (Boil)
0.6 g/L Centennial (9.7% Alpha) @ 20 Minutes (Boil)
1.2 g/L Amarillo (8.6% Alpha) @ 10 Minutes (Boil)

I think it might be simpler if I just pose the question, do you think this recipe will make a good beer? I am aiming to create my first partial mash BIAB to make a strong beer that has both a bold hop and a bold caramel/roasted malt character with a deep red colouration. I also noticed that the FG is a bit high. Does that mean that it will finish quite sweet? Any tips to tweak this recipe would be greatly appreciated. My LHBS is a new business and they have a bit of a limited selection so I often can't find specialty ingredients.
