Recently I got a 6-pack of DuClaw Euphoria Toffee Nut Brown Ale and loved it. So I set about making my first actual clone recipe.
Description is 5% ABV, Pale and Crystal malts, Rye and Chocolate malts with Fuggle hops. 22IBU
BiaB All grain 3.75 gallon recipe
3.75lbs American 2-row Pale malt
1lbs Crystal 40L Malt
.75lbs Victory Malt
.75lbs Rye Malt
.5lbs Chocolate malt
Mashed at 157F for 75 minutes, secondary steeping for 15 minutes at 165F
.25oz cascade 7% 60min
.25oz Fuggle 5% 45min
.5oz Fuggle and .1oz Cascade 15min
.25oz Fuggle 1min
Irish moss 1tsp 15min
S-05 Yeast
Calculated OG 1.05, FG 1.014, ABV4.7%, 22IBU, SRM26
Actual OG was about 1.051, maybe 1.052, which puts it very, very close to the 5% (plus in my limited experience with S-05, it seems to attenuate a little better than what the brewing calculator is telling me it does, especially at lower gravities, so I am expecting more like 1.012-1.013). SRM is very close. It smells and tastes just like I'd imagine the Wort to taste like for Euphoria.
Time will tell how close it actually is. I am very much looking forward to this one finishing up.
Now time to come up with good White IPA, APA, AIPA, wheat and Blonde recipes and convince my wife to let me brew them in the next couple of months to stock up for late spring and summer and my 3 month brewing hiatus.
