Hello, just brewed this up this afternoon. Some elderberry plants grow where i work, so i picked enough flowers to fill a grocery bag, along with 3-4 large yellow roses that have a really nice sweet citrus scent. I used 1.5 pounds of white sugar and only .5 pounds of honey because i heard that the elderflower can be very strong.

Elderflowers: 5 3/4 ounces
Sugar: 1.5 pounds
Wildflower honey: .5 pounds
Water
Juice of 1 Lemon
2 Sprigs Chocolate Mint
2 Sprigs Lemon Balm
1 Campden Tablet
Lalvin EC-1118

Boiled water and steeped all the herbs and flowers in a cheesecloth for 2 hours, then stirred in the sugars and siphoned it into a 1 gallon w/ crushed campden.

Will add the EC-1118 tomorrow. SG is 1.074

Smelled amazing while it was steeping, tastes good too.

I want to carbonate this lightly and bottle it in clear beer bottles.

Anyone ever try this?
 
I haven't yet, but I will similar soon! Might go with wild yeast first, (minus the Campden tab) and finish off with EC1118 if necessary.

How did yours come out?
