I'm looking to brew an elderberry stout as they grow in my garden and is a lovely recipe used in 9th Century Britain
However, I'm looking to cheat a bit! I intend to brew a "Beer in a Bag" stout and add the elderberries at secondary fermentation so there won't be a "boil" as such for the brew
How would you go about creating the elderberry infusion? I was thinking of boiling the berries in a cheese cloth in a litre of water for 30 mins, then squeeze the bag out. then add this to the secondary fermentation once it's cooled a little.
Apparently putting elderberries in the primary can cause excess bitterness whereas in secondary the fruit flavour remains more pleasant
Any advice from people that have brewed with berries before welcome!!
