Have 3 batches of elderberry wine. They have been on a slow fermentation for about 5 months. They profuse about one CO2 bubble on a one piece airlock every 2.5 min. After 5 months should I worry about things?

As long as you have proper sulfate levels you are good to go.
Elderberry wine can take some time to fully ferment if the sugar content was high and to taste good it needs to bottle age for several years in my opinion.
