i am getting ready to brew beecave kolsch. i haven't had it before. i have some fresh lemongrass. would that be good in this beer or is it better left alone?
 
In general I think it's worth it to brew a recipe as-is without any extras the first time around- or at least leave the spices, etc for part of the batch. I dry hopped a belgian pale ale I made, and while I like it I wish I had left some plain just to see what the recipe was really like.
 
that's a good idea. i think i'll keg the whole batch exept for a 2 qt growler to which i will add a strong lemongrass tea. i don't normally add crap to my beer, but i have been wondering about this lemongrass flavor for a while now.
 
ed's kolsch is now 2 weeks in the keg. it does not need the lemongrass. this beer is light, malty and citrus/hoppy all while being well balanced and crisp. not too dry, this kolsch is a perfect beer for summer. who is this edwort guy, anyway? how are his recipes so damn good?!
