How to avoid? All my homebrews have it, but worse if overcarbed.

Clumpy may have been a better term. Seems like commercial beers head stays more "level"? I guess rdwhahb
 
You hit it on the head,mr shot. That pillowy head is creamy & gives more dimension to the mouth feel of the beer. Not a bad thing at all...congrats!!:tank:
 
if your extract brewing reduce the amount of dexrins/matlodextrins.
if its all grain do a protein rest.

The surface tension is too high. as the co2 disapates the head slumps in large chunks like that giving the homebrew look,

That is the technical explanation I was looking for with my original vague question.
