I am new to brewing and definitely new to kegging, but the more I think about it, the more it makes sense to me to just go for the kegging system.

Here's my question:

In your guys' experience, does it make sense to shell out the extra cash for a dual line regulator, or is a simple manifold the sensible way to go?

the manifold is fine if you want to carb and serve all your beers at the same pressure.
 
I've been using a three way or four way gas splitter for the last year or so. It's worked fine, but I'm finally getting a manifold to replace it. As long as you don't do anything stupid it'll work in a pinch, but I'd probably spring for a manifold if you have the cash on hand.

Exactly ^ If you want to carb more than one batch at different styles/pressures you'll need the double CO2 reg. Else, just use the single CO2 regulator and a manifold to carb more than one batch at only one pressure.
 
I just purchased a kit from keg connection, went with the dual regulator. I like the idea of being able to carb one batch while serving another.

This is why I'll be adding a second regulator soon. I usually just carb at serving pressure, but occasionally I need to carb a beer in a few days and it's nice to be able to still serve while I do this without switching things around.
 
If you can get a good deal on a dual body regulator, I would say go for it. I have a 3 way manifold, and while it's nice to have 3 kegs on tap for cheap, it would also be nice to have 2 or 3 different pressures for each of them.
