Hey guys,

I am making an IPA tomorrow with an OG of 1.071. Mrmalty says I should use 1.2 packets of dry yeast.

I have 2 packets of US-05 in the fridge. Should I just pitch both packets to be on the safe side?

Are there any advantages or disadvantages to using 1 packet or 2?

I prefer to overpitch rather than underpitch. I like my fermentation to take off quickly. If it's a situation like that where it's something like 1.5 packets, I will just sprinkle the packets right into the wort, and consider the 0.5 a sacrifice to poor rehydration practices.
 
If it was 1.5 I would say pitch both, but I'm pretty confident US-05 can handle an IPA of that gravity with one packet, considering they are saying 1.2.
 
Oh, I know US-05 can handle that, but as I said I prefer to overpitch rather than underpitch. I like well attenuated, clean fermented beers, and I'm more likely to get that by slightly overpitching than I am from slightly underpitching in my experience.
 
Either would work. I'd agree with nuckingfuts and go with one and save the other for another brew. Are the packs 11 grams? if so, one should work. If they are 7 grams, I'd go with 2. Do you wash/save yeast? if so you could pitch both and wash after fermentation and have enough to brew several more batches.
 
I did a IIPA that started at 1.091 and pitched one packet of US-05, in 7 days I was down to 1.012, so IMO, one packet of that stuff is enough for any 5 gallon batch you'll ever do. The cell count on the dry yeasts are massive provided you treat them right.
