Has anyone ever tried this? Drop a few dried thai chili peppers or Scotch bonnet peppers into the fermenter a few days before bottling? Is that a thing? If so, how did it turn out?
 
thats how many peppers are used. I for a raspberry jalapeño beer and 3 fresh jalapeños sliced down the middle then roasted in the toaster oven till the skin blisters. I deseed 2 of the 3 peppers and the beer still has to much heat for some people so be careful what you do and how much you use. Pepper heat will fade a bit but not much in my experience. If you overdo it your stuck.
 
I made a habanero chocolate porter and just soaked a halved pepper in vodka to make a tincture and pitched the liquid . Its definitely got some heat but no pepper flavor which was disappointing. As a side note, they have "heatless" habanero peppers that I may grow next year and add those to fermenter to get the pepper flavor.
