So we just started Ed's Apfelwein as a base for a berry cider. After we pitched the yeast, we noticed the Best Before Date: May-25-07. I've read that you guy's usually make a starter with old yeast to see if it is still good. But since mine is already pitched, do i just sit back and wait to see if it starts up after a few days? If it doesn't, can i repitch fresh yeast? :confused:

If it matters, it was White Labs English Cider Yeast #WLP775
 
Not a problem. Even an old yeast should be ok in a cider, if it was stored properly. I've had one vial of yeast die in the fridge & it was really obvious. Gray and smelled like sewage.

It is always a good idea to have some dried yeast in the fridge.
