I have a mead that has been fermenting for seven months and now I want to bottle it. I want to make it sparkling do I just add sugar or is that yeast dead?
 
Yeast DO die, and they DO go to heaven. My view of heaven can't exist without the ability to make and drink beer.
 
You will still have viable yeast if you have not exceeded their abv tolerance. After 7 months it may take awhile to carb though.......they may be a little sleepy.
