I'm trying to determine if I don't like certain beloved IPAs because of the yeast strain that they use. My three examples are Dogfish Head's 60 and 90 Minute IPAs, and Schlafly's AIPA.
These all use Simcoe and Amarillo, and other hops that I love but I don't get any of these characters in the finished beers. I don't get any of the normal hop aroma or flavor I would normally get from these hops so I'm wondering if I'm sensitive to the yeasts that are used. These beers seem muddled and not at all interesting to me. I have had them all multiple times and they were fresh beers.
I think that Dogfish uses Pacman yeast, and Schlafly uses an Alt yeast on everything. I do like other beers these breweries make, but I dont get why people love these beers so much.
Any thoughts? Is anyone else the same as me?
