I'm trying to determine if I don't like certain beloved IPAs because of the yeast strain that they use. My three examples are Dogfish Head's 60 and 90 Minute IPAs, and Schlafly's AIPA.
These all use Simcoe and Amarillo, and other hops that I love but I don't get any of these characters in the finished beers. I don't get any of the normal hop aroma or flavor I would normally get from these hops so I'm wondering if I'm sensitive to the yeasts that are used. These beers seem muddled and not at all interesting to me. I have had them all multiple times and they were fresh beers.
I think that Dogfish uses Pacman yeast, and Schlafly uses an Alt yeast on everything. I do like other beers these breweries make, but I dont get why people love these beers so much.
Any thoughts? Is anyone else the same as me?

FWIW, I've never been to amazed with Bell's Two-Hearted. It's a fine beer, but not the world-beater a lot of my friends make it out to be.

I didn't like DFH 90, too sweet for me. I've liked the other famous ones I've tried like Sculpin, Double Jack. Wookie Jack, Majarajah, etc.

I haven't had Pliny, Heady Topper or some of the others though.

Tbh the only dfh ipa I like (not love) is hell hound, 90 is to malty and sweet and 60 is just meh. Sounds like your more of a west coast ipa style lover. I'm the same way, I'd take pte over heady any day of the week.

I'm gonna go with yeast/ malt / fg being the reasons why you don't like those beers.

DFH uses doggie yeast. In any event you are talking about different takes on the IPA style (and 90min is an IIPA). Not every brewery out there is trying to clone the next guy, and please remember that both 60 and 90 have been around for more than a decade. The whole "new thing" from DFH was continual hopping. Now the "big thing" is hop bursting which many new breweries are doing to get more of that "West Coast" character. These techniques lend to different flavor and bitterness characters by themselves.

...and remember that DFH is on the East Coast which doesn't tie them to a specific style...and forgive me if I'm factually wrong but my opinion that the "East Coast" flavor of beer is enormously attributed to DFH. So I would agree with Doctor_M that if you don't like the beer, then you would probably appreciate the "West Coast" style IPA/IIPA's.

I'm visiting DogFish Head next weekend! I've heard they have the 120min on tap at their main brewpub in Delaware.

Being in St. Louis should give you a massive variety of options to try. Make sure your going to a nice, reputable craft beer store so you have a lot of choices, staff with experience, and most importantly, fresh beer.

Firestone, Lagunitas, Stone and several other of the major distributors should easily be in your area. They are far cleaner IPAs and in the west coast style. If you don't like those, you probably don't like IPAs.
