Curious question, if a beer had an infection would you see a change in the gravity?

Example: 1.050 OG -> 1.010 FG but if there was an acetero, brett, or lacto infection would you lose additional gravity points?

Yes, if a beer has brett or bugs in it, the gravity will surely drop. Albeit slowly, but those things consume sugars that sacch yeast cannot.
