Do I Need to Autotune Again - & How do I calibrate the probe?

I have an Auber PID as modified by Brau Supply. After extended use, the wires on the PT100 RTD temp sensor snapped. I got a cheap replacement from eBay.

I have two questions:
1. Do I need to autotune again now that I have a new sensor? The PID held temps pretty well with the prior sensor. I am brewing soon and have little spare time in the interim. I am inclined to assume it will be close enough and to keep an eye on temps. I can switch to manual if the swings are too big. Is this OK, or is a new autotune really important?

2. When I put the new probe in still water it reads 70.5. A laser thermometer reads 68.5. Assuming this means the probe is 2F high (and yes, I know that so assuming is way over-simplifying) how do I tell the PID to take 2F off of all the temps it reads?
 
My educated guess seemed to work. The old probe had two blue and one red wire. The new has two red and one blue. I put the two red where the two blue were.

The next morning, the probe and my laser thermometer were within 0.1F of each other. I went ahead and brewed, and the PID held temp within about 0.3F. It is nice to finally have this working like it should.
