Do I need multiple gas tanks for my future keezer build?

I'm going to be building a keezer in the new year. Intent is to have 5 taps:
- 3 standard Co2 carbed beers (ales/lagers/etc)
- 1 stout/porter/etc infused with beergas
- 1 cold brew coffee infused with 100% nitrogen

My question is, once these individual kegs have been pressurized with their respective gas, can they all be served off of the same type of gas without consequence? If so, which one would that be, 100% nitrogen?

No, anything that was carbonated with CO2 would gradually go flat if served on straight nitrogen.
As the head space increases CO2 will break out of solution to re-establish partial pressure equilibrium.

The coffee is the only beverage listed that wouldn't suffer...
