I've been extract brewing for a couple years, thinking about going AG. But I'm really struggling finding a style of beer I really like. Over the last few years I've bought many a custom six back at the local beer barn, but it seems if one in six is moderately to my taste it's a success. Do not like wheat, got that figured out. Don't care for English style ales. Mainly lean toward double IPA's. But I don't like the strong piney notes coming through. Don't like overly malty either. It just seems to be hard to find a real go to beer. If I had to name two now it would be Risen by Six Point and Midwest Coast IPA by Mother's.

Love Bourbon, but it seems to be a bit hard on my stomach, so I backed off that considerable. I'm thinking if I go AG, I can experiment until I find a recipe that suits me.

Any sage advice from others traveling this road?

I'm a fairly young and novice brewer still, but my advice is don't worry about boxing yourself into a style.

Going all-grain won't cure your lack of enthusiasm as mentioned above. It may help bring back some love because of the complexities compared to extract, but I wouldn't worry too much about this. Why not just make beer tailored to your particular taste?

You say you like double IPAs but not the pine notes. Make a Pale Ale but experiment with different hops, different amounts of hops and adding them at different times. It might still take a few goes but as you try, you'll find your balance of hoppiness and maltiness.
 
I too thought I did not like wheat until I found Lagunita's Little Sumpin' Ale. And a fresh home-brewed hefeweizen beats any store bought hefe.
 
if you like IPAs but not so much piney, you should look into brewing something with some tropical fruity type hops.
also, not liking most of the craft brew you try doesn't mean you don't like beer. a lot of what is out there is just riding the craft beer bandwagon & isn't crafted all that well IMO.
& finally...all commercial hefes are not bad, just the domestics. you should try one from Munich if you haven't.
 
You know, I like most beers, but find myself tiring of everything that's out there. I prefer DIPAs and brew those most of the time. Unlike you, I prefer the dank stuff too. But now I'm even tiring of those. My plan then, is to start adding bourbon to everything (or at least racking a few gallons per batch onto bourbon). I know you said you the bourbon hurts your stomach - it does mine too if I drink too much - but a little in a porter or something can be subtle, different and amazing. I make a good bourbon Porter and am currently drinking a Stone AB aged in Kentucky bourbon barrels. Delicious.
